(Serves 4)
Ingredients:
¾ cup of uncooked white rice
2 cups of milk
1/3 cup white sugar
1 egg, beaten
¼ tsp salt
2/3 cups raisins or other dried fruit of your choice
1 tbsp butter
½ tsp vanilla extract
Pinch of cinnamon
Instructions:
Cook rice according to package instructions.
Combine rice, 1 ½ cups milk, sugar and salt in a medium sized saucepan. Cook for about 15 to 20 minutes until creamy and thick. Add the remaining ½ cup milk, egg and dried fruit. Cook for a further few minutes. Stir constantly.
Take off heat, stir in vanilla extra and butter. Sprinkle with cinnamon and serve immediately.
